Philippe Mesnier knew he wanted to make a PetNat Rosé, because the clay-based soils around Azay-le-Rideau in the central Loire valley would be a great match for Gamay and Grolleau. But when faced with the choice of making a methode traditionnelle or ancestrale, he was convinced that the latter, ‘natural sparkling’ method would be a better match, allowing the terroir to shine through.

This rosé sparkler is a dynamic wine, with strong red fruit aromas and nice body. But, with no residual sugar, the minerality remains very present, and the acidity on the end of palate balances it out perfectly.

When asked what his preferences are for pairing, Philippe immediately suggested a soy sauce or saké-based stir fry. The bubbles and stony minerality are a perfect match for complex savory meals.
