This weeks offer is a look into the world of Elian Da Ros, a winemaker that holds the double title of one of France’s most respected winemakers and maybe one of the least well known. We are highlighting two of his most beautiful, fruit-forward light reds that will make you scratch your head and say: I should be drinking more Abouriou!

Elian Da Ros’ Domaine is just south of Bordeaux, where he works with the prized Bordelaise varietals like Cabernet Franc and Merlot, but aptly has a knack for the local varietal, Abouriou.  This indigenous grape is known for it's spicy character, deep color, and tannins.  Stylistically, Abouriou is often compared to Beaujolais' Gamay, especially in the hands of Elian who vinifies the grapes using methods like carbonic maceration which emphasize its bright fruit and acidity.

Today, we’re going native, and offering Daros’ uniquely Marmandais cuvee: Outre rouge.  Outre rouge is a blend of 90% Abouriou, and a 10% blend of Merlot, Cab Franc, and Syrah.  All varietals are vinified separately using three different techniques – carbonic maceration, saignée, and press – before being blended and aged in tank.  Outre rouge is super light in color, but long on fresh raspberry-cran fruits, earthy spice, and a silky finish.
