The Loire Valley is one of the epicenters of biodynamic farming in France, in large part thanks to Nicolas Joly who has been preaching the gospel of biodynamics for many decades and has influenced many of his neighbors to join the movement. Matthieu Vallée took over the Chateau Yvonne in 2007, and immediately began a biodynamic regimen.

Saumur is one of the greatest terroirs in the Loire, and is especially suited to Cabernet Franc. The Yvonne rouge is the top wine from the domaine, and comes from old-vine parcels around the town of Parnay, just next to the Loire river. The wines are aged for two years in traditional tuffeaux caves before bottling.

When you open the Yvonne Rouge, enjoy the explosion of dusty ripe fruit with a slightly rustic peppery edge from the Cab Franc. There is a noticeable backbone of fine tannins and acidity that will give the wine structure and balance. This is a substantial wine, and needs a substantial dish to go with it. Try a chili rubbed flank steak or a roast lamb shoulder.
